The black autumn truffle or black hooked truffle, also called Winter Scorzone for its resemblance to the Black Summer Truffle, known as Scorzone (some experts even consider this truffle a variant of the summer one), has a rounded shape, rarely more flattened, and dimensions varying from those of a walnut to those of a tennis ball, although it may happen to find larger specimens. The Uncinato owes its name to the particular shape of its spores which, observed under the microscope, look like small hooks.

Main features:

Its main characteristics, as already mentioned, are similar to those of the Summer Scorzone:

  • The pulp (gleba) is quite dark in color, which in the more mature specimens may resemble that of chocolate, and is crossed by thin and branched white veins;
  • The external part (peridium) appears warty, furrowed by numerous wrinkles, but less accentuated than those of the Summer Scorzone;
  • Fragrance and flavor are delicate, balanced, well defined, characterized by notes of hazelnut, porcini and parmesan.

Season and Habitat:

The black autumn truffle or black hooked truffle ripens from  September to December, mainly in the woods, in very shady areas, characterized by clayey soils, rich in water and humus, in symbiosis with broad-leaved trees, such as  Turkey oak, Downy oak and, above all, Hornbeam. Its harvest season starts on  October 1st  and ends on  December 31st. Similar to the summer truffle, it tends to grow under deciduous trees in humus-rich soils. Direct sunlight, in fact, prevents it from ripening correctly. The Burgundy truffle needs clayey soils, rich in water and prefers trees such as hornbeam and downy oak, which satisfy its nutritional needs.


For optimal conservation of your  autumn black truffle or black hooked truffle, please:

  • Do not remove the earth from truffles;
  • Wrap the individual truffles in a clean absorbent paper towel;
  • Put the truffles wrapped in paper in a closed jar in the refrigerator (temperature + 2 ° C / 6 ° C);
  • Change the absorbent paper every day;
  • Just before eating them, they should be washed with water and brushed under running water;
  • Dry well with a paper towel or kitchen towel.
